Thanksgiving has Passed...Christmas Ahead!

It has been over a month since I have posted an update. Had a wonderful Thanksgiving!!! Even lost 1 1/2 pounds over the couple of weeks I was absent from WW Meetings. Here is a recipe I cooked for Thanksgiving.

4 regular size sweet potatoes
1/2 Cup Fatfree Vanilla Yogurt
Low Fat Granola
Splenda Brown Sugar

Bake sweet potatoes until soft.
Mash and add yogurt.
Put in baking dish.
Add 1/2 cup Splenda Brown Sugar to 1 C low fat granola
Spread granola mixture on top
Bake 350 for 45 minutes

WW and Canada

I am in WW trouble!!! I am attending a conference in Vancouver, BC. Each time I leave a session there is food and beverages calling out to me. I have done well passing them up...but I have now determined I have messed up because of............

Tokyo Joe's Sushi!!!! Below you will find a picture of where I am staying. In the front at the corner I have found Tokyo Joe's! I have never looked up points...just assumed they weren't much due to the size...WRONG!


Well...now that I know...Sushi is off of my list unless I am with someone I can share a roll with!!!

October is Chili Month!

There is a nip in the air...so CHILI is on the menu! Here are a few Weight Watcher chili recipes I found online!

Weight Watchers One-Point Hearty Chili
10 ounces extra-lean ground turkey breast
1 medium onion, diced
2 (28-oz) cans diced tomatoes
2 medium zucchini, diced
2 medium yellow squash diced
1 (15 oz) can black beans
2 (15-oz) cans fat-free, reduced-sodiumbeef broth
4 celery stalks, diced
2 green bell peppers, diced
1 (1 1/4-oz) package dry chili seasonings.

Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the turkey and onion and saute' until browned, about 10 minutes.
Transfer the browned turkey and onion mixture to a large soup pot and add the tomatoes, zucchini, squash, beans, broth, celery, bell peppers, and chili seasoning. Bring to a simmer over medium heat. Continue to simmer until the vegetables are tender, about 20 minutes
Serves 20.

Awesome Taco Chili Recipe (Weight Watchers)
1 lb. lean ground beef 1 large onion, chopped
1 package taco seasoning
1 package hidden valley ranch mix
1 15 oz. can pinto beans*
1 15 oz. can hot chili beans*
1 15 oz. can whole kernel corn*
1 15 oz. can stewed tomatoes*
1 15 oz. can tomatoes with hot chilies (like Rotel)*
Brown meat and onion, drain. Mix ranch dressing mix and taco seasoning mix into meat. Then, without draining, add all the other ingredients. Simmer 1 hour.

Each Cup of chili is equal to 2 points.
Add a dollop of lite sour cream and a sprinkle of 2% cheese.


Weight Watcher Classic Crockpot Beef Chili
Estimated POINTS value per serving 2 Serves 6
Ingredients
1 lb. lean ground beef (10% or less)
2 garlic cloves, finely chopped
2 tbsp. chili powder
1 tsp. ground cumin
1 can (28 oz.) crushed tomatoes
1 can (15 oz.) red kidney beans, rinsed and drained
1 sweet onion, chopped
1/4 cup canned diced chilies
2 tbsp. tomato paste
Oregano sprigs for garnish
Instructions
1. In a large nonstick skillet brown beef and garlic over medium heat, stirring occasionally to break up meat. Drain excess fat. Add chili powder and cumin and stir to combine.
2. Combine tomatoes, beans, onion, chilies, and tomato paste in crockpot. Stir in beef mixture. Cover and cook on High until flavors are blended, 4 - 5 hours. Serve garnished with oregano.
Best Ever Weight Watcher Skillet Cornbread
Estimated POINTS value per serving 2
Serves 12 Ingredients
1 cup whole wheat flour
4 tsp. baking powder
1 tsp. salt
1/2 cup yellow cornmeal
1/2 cup white cornmeal
1/4 cup unsweetened applesauce
2 tbsp. vegetable oil
1 cup buttermilk
1/4 cup honey
1/3 cup egg whites
2 tbs. fat free egg substitute
Instructions
Sift flour, baking powder, and salt.
Add cornmeal and stir until blended.
Add remaining ingredients and stir until just mixed.
Pour into 9 inch cast iron skillet prepared with cooking spray.
Bake at 350 degrees for approximately 30 minutes or until golden brown.
Quick Tips
Spray crockpot with cooking spray for easier cleanup.
This meal is very filling but if you aren't quite satisfied you can add a garden salad.

10 Months

First of all, how did 10 months go by so quickly. It has been almost a month since I last left a Weigh Down report, also. I am excited to report that 62 pounds are gone...13 pounds to go to reach that 75 pound mark!! It has been such a successful journey getting here. But, I want a year from now to be able to report that it is STILL OFF!

I am gearing myself up to face the next few months which include HOLIDAYS!!! Food is such the center of all of the holiday festivities. I am going to plan some WW menus and finger foods that can satisfy my "need" to celebrate! Also, I am going to stay busy serving others instead of myself!

I have also been hearing alot about Couch to 5K I am reading up about it (that doesn't burn many calories) but I am hoping to convince myself to start this plan. I know in my heart that it would help me finish "the race" with WW's as well. Now...if I can convince my head!!!

Best Eat of the Week! With fall in the air and October here...I have fond childhood memories of hotdogs and Rice Krispie Treats! That was on the menu this past week-end!

September 14

I am not sure what week I am on!! My materials are in my car. But, you can tell by my counter...I am going down WEIGH DOWN!!!

Fall is ahead...football, Halloween, Thanksgiving...then Christmas and New Years. We are entering the NO FAT ZONE!!! Plan ahead. I am gearing up to face the challenges that present themselves during this time of year. I AM NOT GOING BACK!!!


Receipe for Tail Gating!

Lemon Cake Mix
I can of Sprite Zero
2 egg whites

Blend together, and bake as directed on box.

Mix together 1 lemon Jello (sugar free)
Poke holes in baked cake
Pour 1/2 of Jello mix over the cake
Cover and Refrigerate

Serve with strawberries, and Fat Free Cool Whip

1/12 of cake = 4 points
Strawberries = 1 point

One Advantage to School Starting

Although I love summer...it tends to be my busiest time at work and I travel quite a bit!!! WELL...school has started and I MADE IT!!!! I am grateful that I was able to have a hiccup in meeting attendance, yet still continue on my Path!!

I don't have any tips today...but I will share my goal for the week. I haven't tracked my points lately writing it down...so my goal??? WRITE IT DOWN! If anyone is reading and wants a suggestion on how to start...how to restart...or how to take it up a notch...WRITE DOWN WHAT YOU EAT this week and determine your points!

Still on it

I will be so glad when my schedule gets back to normal. BUT...I have learned something! I can go out of town, visit Washington, DC...work at different centers...eat out...and STILL LOSE WEIGHT!!!!

I'm not sure what week I am on. My WW journal is in my car. Will document correct week ASAP. Monday...July 20th I weighed in...LOST 3 POUNDS (now I have been absent two weeks!)

TOTAL LOSS: 55 POUNDS! WHOOO HOOOO!

Finally found good Homemade Ice Cream recipe. Thank you Mary Ann Smith (Charles' sister!)

Homemade Ice Cream

1 can fat free sweetened condensed milk

1 large COOL WHIP (lite)

1 tsp vanilla

1/2 gallon (fat free) milk to "fill line" in ice cream maker

Want Chocolate??? Use Skinny Cow fat free Chocolate Milk!!

Where Have I Been???

Well...as always, summertime has hit, and I have been busy traveling for work! I am going to have to refer back to my Weight Watcher card for what week I am on!!! BUT...the last weigh-in I have now lost...52 1/2 pounds!!!! YEA!!!

July 4th is tomorrow...and with that holiday comes some "holiday food memories!" Here are some ideas WW July 4th!!!

Week Twenty

I am so proud of yet another pound gone. But, I guess I am most proud that for 20 straight weeks, 14o days...I have kept my focus on my goal...to eat healthy and lose the extra weight that has been dragging me down!

What I haven't had in 140 days that I thought I could never live without:
  1. diet coke
  2. caffeine
  3. McDonald's french fries
  4. chocolate: candy, cake, covered donuts
  5. unhealthy fast food
  6. Shipley's donut holes
  7. garlic toast
  8. cinammon rolls

Well...you get the idea.

What I have loved the last 14o days that I thought I could never live WITH:

  1. turnip greens
  2. baked fish
  3. steamed vegetable
  4. an apple a day
  5. Sprite 0
  6. salads with dressing on the side
  7. grilled chicken salad instead of fried
  8. water, water, water

So...on to Week 21! This is Memorial Week-end and cooking out is on the plans. We'll SEE!

40th Year Class Reunion

OK...I did NOT start this "live it" with the thought of being thinner when I go home for my 40th Year High School Reunion...but I am glad the two will intersect! I just looked at my calendar and determined there are 21 weeks before the big week-end. If I can loose at least 1 pound a week, that will be 21 more pounds gone! That would be only 5 pounds away from my 71 pound loss goal!!! But...let's not get too cocky! I will still be over 25 pounds more than I weighed when I graduated! HA!

I laugh about carrying my driver's license with a ficticious weight listed. I hope one day to be telling the truth again! Can that policeman not recognize a big (no pun intended) fraud when he sees one. I guess sitting behind the wheel masks my deception!

Week Nineteen

Lost 1 1/2 pounds this week. OK, I am excited about the loss, but writing this I am full of excitement that I have consistently attended meetings, tracked my food, and have stayed focus for 19 WEEKS! That is as amazing as losing the weight. This is not a diet...but a LIVE IT!

Week Eighteen

Charles, as has been the practice this whole journey...has lost twice as much as me. He has lost 81 and I have lost 42. WOW! Together we have lost a small, young woman!!!
I feel like it is time for mid-term pictures. I will get some pictures of us this week-end and post next week.

Week Seventeen

WHOO HOO! Back on Track. Lost 3 pounds this week. That makes 40 pounds. It is hard to imagine the jouney I am on and the success! Weight Watchers is a great way to stay focused.

I will have to admit...I have not been able to walk in the mornings. As soon as school is out, I will continue to join the RCU Walkers.

Meeting my April Goals

I have exercised 2 times already this month (WOW!). But, this morning I met Diane and Barbara at work this morning at 7:00am. We we to the walking track and walked for 30 minutes!!! I am on my way!!! I also found a calculator (posted on the sidebar of my blog) to help me know what GOOD it is doing!

Week Sixteen

Well it finally happened...I stayed the same!!!! I am trying not to be distressed, because I did what I was supposed to do all week. I will admit...I'll drink more water! I am also considering that exercise may be in order! ;-)

Week Fifteen

Weight Watcher Meeting today...2 MORE POUNDS!!! I can't believe I am 2 1/2 pounds away from losing 40 pounds. This has been the most satisfying weight lose experience I have ever had. Yes, I have lost weight many times...but hopefully this will be the time I learn to keep it off. One thing I have sworn I will do: KEEP ATTENDING THE WEIGHT WATCHER MEETINGS after I lose all my weight.

OK...my receipe of the week! So simple: Two ingredients but a BIG TASTE! My sweet tooth was satisfied!


Strawberries,fresh or frozen (unsweetened)
1 cup = 1 point

Drizzled with Sugar Free Chocolate Syrup. I used Hershey's Syrup Lite.

Ingredients
3/4 cup unsweetened cocoa powder
1 pinch
cinnamon
1 1/4 cups
water
1 teaspoon
vanilla extract
1/2 cup
artificial sweetener (such as Splenda)
Directions
1In a heavy saucepan, combine cocoa powder, cinnamon and water. Stir or whisk until smooth. Stir and cook over medium heat until mixture comes to a boil.
2Reduce heat and boil gently for 5 minutes, stirring often. Mixture should be thick and smooth. Cool slightly, then stir in vanilla and artificial sweetener.
3Pour into a container or jar with a lid. Cover and store in refrigerator for up to 3 weeks.
4To serve, spoon 1 to 2 tablespoonfuls over vanilla frozen yogurt or ice cream.

Week Fourteen

Another two pounds!!! YEA! Well, I am half to my goal of 70 pounds!!! I hope to be there when 2010 rolls IN!


Recipe of the week. You may have already heard of this...I was not sure it would really be good...BUT was I wrong! DELICIOUS!

TWO INGRDIENTS!
Lite Cool Whip

One long graham cracker broken into two pieces. (I think this would be great on the chocolate graham crackers, also!)
Spread 2 tsp of Cool Whip on one graham cracker and place other on top like a sandwich.
Put in plastic bag and freeze.
Wonderful Ice Cream Sandwich for 1 POINT!

Week Twelve


Two more pounds! I am so thrilled...and enjoying the experience.

Charles and I went fishing Saturday so my recipe is as follows:

2 large Crappie (White Perch) cleaned whole
2 T lite Mayonaise
Yellow mustard
Lemon Juice

Make a paste out of the Mayo, mustard, and lemon juice.
Coat both sides of the fish and place in an aluminum pouch.
Place in pan and bake at 350 degrees for 1 hour.

6 oz of fish = 4 points

TASTEY!!!!

Week Eleven

Another Weigh In Day! This is week eleven for me and I have lost 30.5 pounds. I am really excited. I will have to say I am also very satisfied with meals and meal planning.


Friday night Charles' son brought crawfish to boil. I was really wondering what I was going to eat until I visited
Point List I found on the Internet. Crawfish (Crayfish...HA) is 1 point for 1/2 cup (2 oz.) It takes a bit of crawfish to make 1/2 cup. I had a small ear of corn, 2 points, and one small potatoe for 3 points. SO for about 6 points....WOW what a fiest!

Slow Cooker

Boneless, skinlesss chicken breast

Rosemary and Garlic Seasoning

Cover with

Let it cook in the crock pot for 6 - 7 hours.

Prepare rice and add small can of green peas and carrots.

Pour 1/2 cup of cooked chicken over 1/2 Cup of Rice mixture.

Points:

1/2 cup chicken 2 points

1/c rice with peas & carrots 2 points

Week Nine

I reached it today at the weigh in. The above link is a great article dealing with this part of WWs. I am trying to find a picture of the Key chain I received. I guess I will have to take a picture of it.

There are 3 more phases I will go through and earn a sticker to add to my KeyChain. TOO MUCH FUN!

Recipe of the Week:

Fat Free Vegetable Ranch Dip (Shared at WW meeting today:)

1 C fat free mayo

1 C fat free plain yogurt

3 t parsley

1 1/4 garlic powder

1 t onino powder

1/2 t salt

1/4 t pepper

1/4 t paprika

Wisk together ingredients and refrigerate for a few hours and serve. 1/4 C (4 T) = 1 Point.

I tried it today...very tasty!!!

Week Eight

It is so exciting to see that scale go WEIGH DOWN!!!! Charles and I both commented that eating healty is much more satisfying. I can remember when I was eating any and everything I wanted...and I seemed to always be hungry. But now...my meals are enough and I am not wanting more. AMAZING!!!

Week Seven

WOW! Three more pounds! I am loving Weight Watchers! The meetings allow me to be accountable as I weight, listen to others' experiences, and be encouraged!

My recipe for the week!

2 cups broccoli crowns 100 calories
2 T light mayonnaise 70 calories
1 cup grapes cut in halves 110 calories
2 T sunflower seeds 100 calories

Mix all together. 1/2 cup serving = 1 Point

February 9, 2009

Well...it has been two weeks since I posted. It has been a very sad week. I lost my dad, Clarence Edward Dossett. He was buried in Natchez, MS on Saturday...next to my mom. He was a great dad!

OK...I guess my post for this week is...you CAN go through emotional events and still stay true to the WW plan. Making a choice to follow the points was made before I found myself hungry...or staring at plates of food provided by precious church friends after the service.

I weighed today...2 more gone! (oh...and I lost 2 last week)

Weight Watchers Meeting January 27, 2009

I am enjoying going to the WW meetings, listening to the successes of other members, listening to Reva (our leader) share WW tips and motivational lecture. I lost 2 1/2 pounds this week! YEA!


Recipe of the week:

Chocolate cake mix (any brand)

I can diet cola (any brand)


Mix and pour into muffin pan. Each cupcake is equal to 1 Point. Put a dollup (love that word) of Fat Free Cool Whip...HEAVEN!

WEEK TWO

I have been watching Biggest Loser for years now...and the story is: Second week is the hardest. I had a good eating week and lost 2 pounds. I am not going to think that was not enough...it was something....8 sticks of butter!!!

Favorite Meal of the Week:

Chicken Stroganoff (SP?)
Crock Pot Recipe

Chicken Stips (boneless and skinless)
1 can fat free mushroom soup
1 package french onion soup mix
1 sm carton fat free sour cream

Cook low 4 - 5 hours
1 cup serving (4 points)
Serve over 1/2 cup brown rice (2 points)

First Week's Results

Well...I weighed and lost 8 pounds the first week. YEA!!! And I can truthfully say I was very satisfied with the food I ate each day. So here are the top 10 things I learned the first week:

10. You don't HAVE to eat salad for every meal.

9. Grilled talapia is easy and fast to cook.

8. Planning each day's meals the night before with Charles was very helpful.

7. Looking forward to Monday's Weigh In is a motivator.

6. Eating Progresso soup at the office while others are eating fast food is posssible and very enjoyable.

5. Being on this Liveit (not diet) even makes me want my house to be cleaner! (Go figure!)

4. I didn't drink enough water.

3. An orange at 10:00 am and an apple at 2:00 pm makes my day go by fast.

2. Measuring food...a must.

and the number ONE....

1. Writing everything I ate down and keeping track of the points helped me stay focused on the goal!

One favorite meal from the week!

Slice up squash, broccoli, and cauliflower

put them in a steamer and steam until firmly soft (TEE HEE)

Grill a talapia steak in 1 tsp olive oil with Tony Chachere seasoning.

DELICIOUS!!!

It has begun!!!

Today I rejoined Weight Watchers. YES...rejoined. I am a lifetime WW member. That means...at one point in my life I reached the goal weight that was designated for my height. I had to stay at that goal weight for 8 more weeks...and thus became a lifer.

The advantage is...I never have to pay the initial start up fee. The other advantage is...I could weigh in once a month at no fee as long as the goal weight is maintained...so I guess you know now...I did NOT maintain the goal weight.

Here I go again. I am really excited about joining. The program has changed since I have attended. My goal is to BLOG how it goes!

I plan to update my picture weekly...I'm going WEIGH DOWN!
